I have a couple of co-workers that soak the ribs overnight in pineapple and apple juice then the next day they put a dry rub on the ribs for a few hours before they put them in the smoker.

A local eatery soaks their ribs in a brine before they cook them. I've brined chicken before roasting but haven't tried it with ribs yet. I usually just leave a dry rub on the ribs a few hours or so before I cook them.

I love this video on how to cook ribs. Great camera, nice production, good lookin' recipe, uses a Green Egg, and the color and sharpness... Yumm!

Did you see that guys cutting board sliding around, put a damp
towel under yours and it will stay still.
