Some woods used in high end Japanese chopsticks include, Tamo (Japanese Ash), Mulberry, cherry, Satine (bloodwood), Snakewood, Ebony.

You're right, Steve. With this chopstick master kit, the time and wood investment in making them is very small. That allows having some fun with the finish. I've seen some wonderfully painted...

I think most decent, good quality chopsticks here have a natural lacquered finish.
Some chopsticks are sold without any finish. Quality Japanese chopsticks are regarded as the best out there.
