I prefer bevel down because you can keep the irons sharpened at their optimum angles which would depend on the steel. I think M2,HSS, HCS steels perform the best honed at 25 - 27 deg. A2 between 30...

The pins are 9/16" square to start. The length is just shy of the plane finish width. I cut 1/16" deed cheeks on the table saw and then dadoed a board to be able to hold the pin vertical on the drill...
