Default Favourite methods of finishing Oak?

Lets hear your favourite methods of finishing Oak
I've never really done much accept use a clear oil finish or spray a sealer on and a clear top coat.
I've seen some nice finishes where the pores and grain are highlighted darker with a stain or dye. Has anyone done much of this type of finishing?

My favorite way to finish oak is to put it in the fireplace!

Okay, sorry guys, I'm not a big fan of oak, although the smell of milling it brings back fond memories of school wood shop.

Not big on red, but like quartered white pretty good. For all the obvious reasons.
Okami, if you're talking about some of the mission style finishes that brought out the ray flake and the pores, just one recipe:
Dye the piece with the color you want to be more in the flake (like gold)
sand the piece very lightly, 320g or so, until it appears almost raw wood again, and most of the surface dye isn't visible.
Dye the piece with the primary color (i.e. dark brown)
Seal with wash coat of shellac
Glaze ( I use asphaltum ) let dry, seal with another coat of shellac.
After that, you can build the finish with shellac, you can lacquer it, whatever you like.
