How do you get clamping pressure out there in the middle of the tofu?

You might be on to something there Craig... I read the other day that with meat prices being what they are, meat packers are combining smaller pieces together with 'meat glue' to make big chunks of meat. Sure wouldn't want to see a glue line in my filet mignon!

Salivary enzymes and digestive juices. But it still can't be good for you. I have to say that it's turned me off fast-food hamburgers completely. Apparently McD's uses it fairly liberally.
